Potatoes dumpling “della Nonna Nella” with 4 cheeses of Fiemme
A classic first dish of Trentino with potatoes.
Our great Grandmother Nella used common this recept every moments of the year, because potatoes are a poor great ingredient from Trentino and, with few other ingredients, could be delicious.
Cheese sauce in the one is most indicated with potatoes dumpligs, and I'm writing here down the recept. You could serve the dumplings (Gnocchi in Italian language) with a simple butter, some tomatoes sauce or with meat sauce, they will be great at all.
Ingredients for 8 persons:
- 1 kg of white potatoes
- 80 gr potatoe four
- 150 gr flour “00”
- 2 eis
- Salt, pepper, Trentingrana and nutmeg.
How to do:
- Boil the potatoes in hot salty water, when they are ready mash it on a marble table to cool it.
- Mix all other ingredients for minimum 5 minutes, leave it relax for 30 minutes.
- Roll little pices of mixture and slice it to form a dumplin.
- With a fork make it finish.
- Boil the Gnocco in boiling water and the serve it.
Ingredients for the sauce:
- 150 ml fresh cream
- 50 ml milk
- 50 gr Fontal of Cavalese
- 50 gr Formae Valfiemme
- 50 gr of another cheese of Fiemme
- 50 gr Trentingrana
How to do:
- make hot the sauce, don't boil it.
- add the chees in little pieces and make it creamy.
